Without question, these are the best healthy cupcakes I have ever tasted/made in my life. They might even be more delicious than a real cupcake.
In a moment of weakness, I decided I needed a healthy treat. After looking at a couple different recipes and wanting to use clean ingredients, I threw in a bunch of random ingredients into the blender and POOF! The most magical chocolate cupcakes were born- I really don’t know how that happened. They’re super simple to make, and they’re full of great ingredients. It took a couple minutes to pull them together, making them a winning recipe for any busy mom’s schedule! And I’m not even kidding they are better than regular sugary cupcakes… you are going to love them!
2 ripe peeled bananas
1 whole apple, peeled, cored and chopped
5 – 6 dates
2 large eggs
1 cup almond butter
1/4 cup cocoa powder
1 1/4 tsp. baking soda
1 tsp. cinnamon
Pinch of sea salt
Preheat your oven to 375 degrees Fahrenheit.
Place all ingredients in your blender. Blend on high for approx. 2 minutes to form a nice batter.
Fill your cupcake liners 3/4 full.
Place in the oven and bake for 15 – 18 minutes. (Check after 15 minutes. The tops should be firmer to the touch, puffed up similar to a soufflé. They may need 18 minutes.)
Let cool on a wire rack.
Store in an airtight container for three days – if they manage to last that long.
Opted to bake six larger cupcakes? Please increase the cooking time to 20 – 25 minutes.
