Coconut Chia Parfait with Zespri SunGold Kiwifruit

Kiwis are one of my favourite fruits during the summer months. Recently Troy discovered Zespri SunGold Kiwifruit and – oh my word! – they are even yummier and sweeter than the green ones. Our family just loves them! Have you tried SunGold Kiwifruit yet? Unlike the usual deep green tone, Zespri SunGold Kiwifruit has a lighter yellow colour. They’re rich in vitamin C which can help boost your mood and vitality, making them the perfect added treat or topping in your daily diet.

We tend to not eat too much dairy around here, so I’ve started making lots of chia seed puddings with almond or coconut milk for the kids.  I was a little worried they wouldn’t be into the chia seed pudding based on the texture.  Since they’ve loved SunGold Kiwifruit, I decided to fold them into the chia puddings. And it was a success! They love them!

Pairing Zespri SunGold Kiwifruit with coconut and chia seed parfaits results in an easy, yummy breakfast or a healthy treat whenever you (or your kids) want something sweet. It’s light and refreshing, a sure winner in our home! Plus, here’s a fun fact: SunGolds are smooth, so you can eat the skin, which gives you 50% more fibre than if you just ate the flesh.

Prep time: 5 minutes
Inactive time: 3–4 hours or overnight
Serves 4


Ingredients
For the chia parfait:
1 can of full-fat coconut milk
¾ cup of almond milk
¼ cup + 2 Tbsp. chia seeds
¼ cup of agave, maple syrup, or honey
Pinch of sea salt

For the garnish:
Toasted coconut
Zespri Sungold Kiwifruit

Preparation
Gently warm the coconut milk, almond milk and sweetener of your choice in a small pot, whisking to make sure everything is combined. Using a wooden spoon, stir in the chia seeds.

Place mixture in a container and let it sit in the fridge for about 4 hours, stirring it once within that time frame. (Alternately, you can leave it to sit in the fridge overnight.)

Serving
Cut a couple slices of SunGold Kiwifruit. If you want to get precise, use a small round cookie cutter to cut out perfect circles.

Collect the SunGold Kiwifruit remaining after you cut a few slices, along with another whole one. Pop them in a blender to make a puree. (You could also mash it with a fork.)

Fill up beautiful jars or glasses with a thick layer of the of the chia mixture, followed by a small amount of SunGold Kiwifruit puree, and some slices around the edge of the glass. Continue layering, alternating between the chia mixture and puree.  Once you reach the top of your glass, add more slices of SunGold Kiwifruit and top with toasted coconut.
