The Prettiest Overnight Oats

This recipe is so simple to make and looks absolutely stunning when topped with fresh berries, flaked coconut, and even a pretty bloom! If you are having some girlfriends over for breakfast, why not make this the night before and set up the prettiest breakfast for your friends in the morning? Serve with an array of fresh toppings, French Press coffee and some pretty flowers on your table to make your guests feel extra special. 

The base of the recipe is also especially helpful with those busy weekday mornings when you need something nutritious but also need to run out the door at the same time. You can pack this up in individual containers and top it with fruit and a dollop of yogurt, and breakfast is ready. This is sure to be a winner with the kids as well. Let them have some fun choosing what they would like to have for toppings. 

Overnight Oats
Makes 2 ½ cups oats, 3-4 servings
Prep time: 5 minutes


Ingredients
1 1/2 cups (500ml) of old-fashioned oats. (We love Bob’s Red Mill.)
3 1/4 cups of milk of your choice (We love coconut or almond milk.)
2 tbsp hemp hearts or chia seeds
Pinch of salt
1 tsp vanilla

Toppings
Fresh berries (Strawberries, blackberries, raspberries, or blueberries)
Sliced banana
Pumpkin seeds
Sliced oranges
Large flaked coconut
Honey, agave or maple syrup
Freeze-dried berries 

Preparation
Simply stir together the oats, milk of your choice, hemp hearts, salt, and vanilla. Place in individual containers or in one larger one.  Leave in the fridge overnight or a minimum of 8 hours.

In the morning, serve the oats with your desired toppings. You can loosen the mixture with a bit of extra milk. (We like to do this.) Sweeten it, if desired, with agave or maple syrup!

This will last in the fridge in a sealed container for up to 3 days. Double the recipe up to cover breakfast for the whole family!
