I love a delicious refreshing smoothie in the morning. But sometimes I get tired of my everyday strawberry vanilla protein option that I make on the daily. Time to time when I have an extra 5 minutes to spare and I plan out my grocery list accordingly I’ll put a bit more effort into making a unique smoothie. Okay, and I must say this one is amazing with tons of flavour!
Say hello to my “Strawberry Roasted Coconut Lemon Smoothie”. You might need a bit of prep the night before with toasting the coconut but other than that it’s pretty easy and quick!
You will need:
2 cups of frozen strawberries
1 cup of coconut yogurt
2 cups almond milk
1/2 a fresh lemon zest
2 tablespoons fresh squeezed lemon juice
Stevia to taste
Toasted coconut garnish
Makes 2-4 servings.
Blend all the ingredients together in your preferred blender ( I’ve used the Blendtec for years and love it). I like to add a bit of stevia for a bit of a sweeter taste, I also find that it brings out the flavours. Bake your coconut till the tips are golden, then the coconut garnish on top, mix in for a little crunch.
